I would first meet the child for the first lesson before starting the teaching.  In the first lesson, I would find out the level of the child and then start drafting my lesson plans according to the development of the child. I am ex melaka state swimmer and also a Malaysian water polo player in my youth. I have been teaching swimming to adults and kids for 2 years range from 2 years old till age of 55.
